• Ensure effective beverage service in the Restaurant & Bar • Assist with effective operation of the department • Possess thorough knowledge of the full wine list in order to assist guests with choices, make recommendations, and upsell • Develop and maintain the inventory of wine and spirits including purchasing and vendor relations • Assist with the setting up of wine tasting and any other relevant activities • Create and update the wine list in coordination with Chef and the Food and Beverage Director • Ensure compliance with company procedures regarding stock control and accurate charging to accounts • Train staff on available wines and organize educational sessions • Wine list maintenance • Keep wine cellars/storage clean and free from debris • Ensure wines are stored and served at the right temperature

• Plan, supervise and control various operations, working closely and supporting the Food and Beverage Manager. • Anticipate guests needs, respond promptly, acknowledge all guests and resolve complaints, ensuring guest satisfaction. • Constant effective communication with managers and supervisors regarding any guest or staff issues. • Encourage and motivate staff with a positive attitude. • Operate POS (point of sale) and maintain security of system. • Prepare reports for Food and Beverage Manager. • Manage waiters, barman and runners by ensuring the smooth running of the floor and that duties are carried out in a professional and timeouts manner. • Maintain excellent product knowledge. • Prepare weekly staff rosters if need be. • Monitor staff closely to identify any transgressions throughout service so that these can be addressed immediately

• Create and update the wine list in coordination with chefs • Recommend food and wine pairings • Advise guests on wines based on their personal tastes and food choices • Inform guests about different varieties of wines and prices • Ensure wines are served at the right temperature and within the proper glassware • Store open bottles properly to maintain strong taste • Manage wine cellar and ensure it’s fully-stocked • Train the staff on available wines • Negotiate purchase prices with vendors • Organize wine tasting days or “wine of the month” events • Comply with all health and safety regulations

• Staff training & supervision • Maintain tidiness and hygiene of the FOH area • Actively allocate & assign shifts with restaurant employees • Establish customer relations • Set targets for employees • Keep track of and order stock items • Help out in the busier zones • Responsible for cash drawers and petty cash • Monitor reservations; look out for regular guests • Continuously brief & train staff based on updates

• Perform all opening, closing and nightly duties • Take orders for beverages from guests and deliver beverage orders promptly • Bid farewell to guests, using guest's name when known, and encourage them to return • Monitor and maintain cleanliness, sanitation and organization of assigned work areas • Assists the department head with the training/mentoring of new employees as requested • Maintains all assigned wardrobe/costumes/uniforms and appearance in accordance with established uniform guidelines • Works in an efficient and professional manner while maintaining a positive attitude and delivering superior guest service at all times • Initiate conversation with guests, inquiring about their satisfaction • Communicate with staff and managers regarding guest requests • Perform all other job related duties as requested • Responsible for accurately checking Guest identification
